How We Keep Buttercream Silky and Light

Buttercream is simple on paper, but texture depends on temperature and patience. Butter that is too cold stays lumpy; butter that is too warm can lose structure.
We mix slowly at first, scrape the bowl often, then finish only when the texture is smooth enough to spread or pipe cleanly.
The goal is a finish that holds its shape while still tasting light beside cake, fruit and chocolate.
